The secrets of light and healthy leavening, signed by chef Simone Salvini.
How to make bread, focaccia and rolls with sourdough, using semi-integral flours (type 1 and 2) from Molini Spigadoro. From refreshing to storing sourdough, making different doughs and rising methods, to baking and steaming. All participants will get complimentary “star” sourdough made exclusively with organic flours and stored by the chef more than 15 years. In addition, sweet and savory baking techniques will be explained and different types of breads and flatbreads will be made.
