Molini Spigadoro is a partner of the Funny Veg Accademy cooking school, the training center in Milan where you can learn to cook vegetarian haute cuisine dishes and more, under the guidance of one of the leading exponents of this lifestyle choice: chef Simone Salvini. The collaboration was created with theaim of exploring vegetarian cuisine with a focus on pastry, without distorting the image of traditional pastry, which remains a true art based on traditions. Making a dessert that is lactose-free, egg-free and zero cholesterol, but equally mouth-watering, increases business and differentiates you, expanding the customer base. What is certain is that the desserts come out delicious, but they are also much lighter and more digestible!
The Academy’s offerings focus on professional courses in Haute Cuisine with Simone Salvini’s Ghita Academy, pastry courses with Stefano Broccoli, classes dedicated to health and wellness in food and natural cooking with Dr. Mara di Noia, a food therapist, joined by Giulia Giunta of “La mia Cucina Vegetale.” A school for professionals that responds entirely to the canons behind Chef Salvini’s dishes, “In good cooking, the first ingredient is always man.” This is his slogan, his mantra, his credo. This will be a preview of PASTICCERIA VEGETALE LAB, the educational workshop with master Stefano Broccoli, organized in the coming months by Molini Spigadoro at Funny Veg Academy for pastry professionals interested in seizing the opportunities of an evolving sector. We will start from the choice of raw materials, types of flour, sweeteners, processing techniques and ingredient balancing to achieve an excellent plant-based pastry product.
