Not dyes, but ingredients
Molini Spigadoro offers a line of food ingredients with coloring properties, called “coloring foodstuff.” These are concentrates and powdered extracts derived only from plants, fruits and vegetables in the Taste and Color line.
Six references are now available and sold equally: Gusto Green, Gusto Red, Gusto Yellow, Gusto Pink, Gusto Purple and Gusto Blue.
“Professionals are attracted to this line for several reasons,” explains Sara Zeppadoro, the company’s marketing manager. The products that compose it are extracted only from plants, fruits and vegetables, they can be used in all sweet and savory preparations, they transfer to the preparations a delicate taste and color associated with the ingredients
contained, they are fine powders, easy to use and can be used without limitations imposed by regulations. Moreover, the raw materials used are selected after careful research and numerous laboratory, processing and baking tests.”
“Our company,” Zeppadoro continues, “is always looking for new products. Our goal is to develop natural ingredients that can delicately characterize the taste without altering the finished product and to connote
the latter with palatable coloration even after cooking, a process that often alters pigments as the pH changes.”
