Natural pigments
for healthy and tasty ice creams

Let us take a good look at the colors of the ice cream, do they seem to reflect the raw material in the name? If they are too bright, if apple is green like mint, watermelon is red, and strawberry is too pink-even in winter-it is likely that the colors of the ice cream are not natural, but substances are used to help them be that way.

On the one hand, it is true that some extracts used to make ice cream have no color, for example, the oil that is obtained from mint leaves is colorless, as is the juice extracted from watermelon, melon and other fruits. However, to make ice creams, mousses, parfaits and sorbets more inviting, there are alternatives to chemical dyes. The products in the Taste and Color line are natural food colorings with ingredients extracted only from fruits and vegetables, which give ice cream preparations eye-catching and absolutely healthy colorings. What’s more, very small amounts of product-2/4 g of powder per liter of milk-are enough to achieve the desired color!

Tips for applying natural food coloring in ice cream making:

gelato-alla-menta

Mint flavored ice cream

To make mint ice cream green, 2/4 g of Gusto Green, made from spirulina and safflower, per liter of fresh milk should be added to the mint leaves and natural essence.
gelato-lavanda

Lavender-flavored mousse

To give the lavender mousse a beautiful wisteria color, 3 g of radish-cherry-based Gusto Pink per liter of fresh milk must be added to the natural infusion.
gelato-cocomero

Watermelon-flavored ice cream

To make watermelon ice cream red without using synthetic dyes, simply add 2/4 g of Gusto Red, with red beet extracts, per liter of fresh milk to the preparation.
gelato-al-melone

Melon-flavored ice cream

For an orange-colored melon ice cream made with natural ingredients, mix 2/4 g of Taste and Color Red + Yellow for each liter of fresh milk.
gelatoal-pistacchio

Pistachio flavor ice cream

To make pistachio flavor green without using synthetic colors, add 2/4 g of spirulina and safflower-based Gusto Green to the preparation for each liter of fresh milk.
