baci di dama (lady’s kisses ) are sweet treats originating in Piedmont, named for their composition, formed by two crumbly cookies that come together in a dark chocolate kiss.

The original recipe can be made with either hazelnut or almond flour; the addition of Rice Flour Mix gives the baci di dama a fragrance and lightness that will win you over!

Preparation

  1. In a large bowl or planetary mixer, combine the previously sifted flours, powdered sugar and slightly softened butter at room temperature.
  2. Knead quickly and form into a ball, place in refrigerator and let rest for 30 minutes.
  3. Roll out the dough with the help of a rolling pin until it is about 1.5 cm thick.
  4. Using a small pastry cut ter with a diameter of about 3 cm, cut out small disks and work them with your hands to form small balls. Place them well apart on a baking sheet covered with parchment paper.
  5. Bake at 160° for 20 minutes, take out of the oven and let cool.
  6. Meanwhile, break up the chocolate and melt it in a double boiler.
  7. Allow the melted chocolate to cool after which pour it into a disposable piping bag. Cut off the end of the pastry bag and decorate the flat side of each cookie with chocolate, pair each kiss by making them fit together by pressing lightly with your fingertips.
  8. Store lady’s kisses tightly sealed in a tin box.
