Madeleine with hemp flour a recipe for the famous and delicious French shell-shaped sweets: in a revised version.
Ingredients for 20 madeleines
- 2 eggs
- 100 gr granulated sugar
- 100 gr rice flour
- 30 gr Organic Hemp Flour (cert. ICEA)
- 100 gr butter
- 40 ml milk
- 5 gr baking powder
- Zest of 1 lemon
- 1 honey spoon

Instructions
In a saucepan, melt the butter with the milk over low heat. Remove from heat, stir in the lemon zest and honey, and let cool slightly.
Sift together the flours and baking powder.
Preheat the oven to 320°F (160°C). Butter and flour a madeleine pan.
In a large bowl, beat the eggs and sugar together until light and fluffy.
Gently fold in the dry ingredients, then the butter mixture.
Pour the batter into the prepared madeleine pan, filling each mold about 2/3 full.
Bake for 10 minutes, or until golden brown.
If you only have one pan, refrigerate the remaining batter between batches. Let the first batch cool slightly before removing the madeleines from the pan. Dust the pan with flour again and fill with the remaining batter.
Before serving, dust the madeleines with powdered sugar, if desired.
