Mandarin cake is a soft and fragrant dessert that is very easy to make, made with the juice and zest of mandarins, strictly untreated. Perfect to give us a boost at breakfast or to accompany a steaming tea during the winter months. Find out how to make this very easy recipe with our cake flour.
Ingredients for a 22-cm mold
- 180 g of Sweet Flour Soft
- 3 eggs
- 160 g of sugar
- 20 g of cornstarch
- 1 sachet of baking powder
- 3 tangerines
- 80 g of peanut seed oil
- 1 pinch of salt

Preparation of tangerine cake
- First wash the mandarins well, peel them, keeping the peels aside, and remove the seeds.
- Place the mandarins together with the peels in the blender and blend well. Pour the oil into the mixture as well, continuing to blend until smooth.
- Beat eggs with sugar with electric whips until light and fluffy.
- Add to the mixture, alternating them a little at a time, the mandarin shake and the flour sifted with cornstarch.
- Also add the baking powder and a pinch of salt, continuing to mix with the whisk until well blended.
- Grease and flour the mold and pour in the dough.
- Bake in the preheated oven at 180° for 40 to 45 minutes; before baking, check for doneness by testing with a toothpick, which should come out dry.
- Let the cake cool and proceed with the decoration.
- Decorate the mandarin cake with water glaze, made by mixing powdered sugar with hot water (2 tablespoons of water for every 100 g of sugar) and slices of caramelized mandarins.
