In this recipe, let’s see how to prepare a tasty lactose-free panna cotta accompanied by vanilla-flavored treacles.
The recipe calls for the use of natural food coloring Gusto e Colore to achieve a very nice multicolor effect.
Ingredients Panna Cotta
for 4 people
Total preparation time + rest 3 hours
- 200 ml soy cream
- 320 ml of almond milk
- 20 g of isinglass
- 100 g of sugar
- 3 g of Taste and Color Pink
- 3 g of Taste and Color Yellow
- 3g Taste and Color Green
- 3g Taste and Color Red

Preparation
- Soak 5 g of isinglass.
- In a saucepan put 50 ml of soy cream, 80 ml of almond milk, 25 g of granulated sugar, and the Taste and Color Pink powder.
- Heat over a low flame, stirring with a whisk to melt the ingredients.
- Remove from heat, add the squeezed isinglass and stir.
- Pour the liquid into 4 glasses or glass jars, about 40 g in each.
- Refrigerate for at least 30 to 40 minutes until thickened.
Proceed as above with the other colors, Yellow, Green and Red, paying attention to the resting times.
When the preparation is finished, let it rest again in the refrigerator for 1 hour.
Ingredients of Braids
Total preparation time 1 hour
- 400 g Gluten Free Flour
- 180 g of sugar
- 50 g of extra virgin olive oil
- 50 g of seed oil
- 90 g of water
- 1 pc salt
- half a vanilla bean
- 5 g of Green Taste and Color
- 5 g of Taste and Color Red

Preparation
- Place all the ingredients for the shortcrust pastry and the pulp of the vanilla bean in the bowl of the mixer or in a kitchen mixer. Knead to make a smooth ball.
- Divide the dough into two parts. Add the Gusto and Colore Green powder to one part and knead to mix. Proceed in the same way with the remaining dough, adding the Gusto and Colore Red powder.
- Wrap the two loaves in plastic wrap and let rest in the refrigerator for 1 hour.
- Line a baking sheet with baking paper.
- Remove the two loaves of pastry from the refrigerator. Form small coils of dough with both colors. Roll them together to form braids.
- Bake in the oven at 180 degrees for 10 minutes.
