Soft, fragrant and light, citrus plumcake is a perfect dessert to start the day on the right foot and with a toothy smile!
The exceptional flavor oforange, combined with that of lemon and goji berries, make this recipe really tasty.
In addition, the presence of our Rice Flour adds a touch of color and the fragrant and aromatic note of red brown rice.
To end on a high note, the topping frosting, prepared with water, lemon and powdered sugar.
But let’s proceed with the recipe.
Ingredients
For an approximately 22 cm rectangular pound cake mold, use:
- 200 g of Red Rice Flour Mix
- 125 g of soft butter at room temperature
- 120 g of sugar
- 3 eggs
- 1 pinch of salt
- 1 organic lemon (juice for the glaze and zest)
- 1 organic orange (juice and zest)
- 1 sachet of baking powder
- 100 g between orange peel and goji berries
- Icing sugar, water and lemon juice to taste. (for the topping icing)

Preparation of citrus plumcake
Work the butter and sugar with electric whips until the mixture is nice and fluffy. Next, add, one at a time, the eggs.
After that, combine the flour, baking powder, a pinch of salt, citrus zest and orange juice to the ingredients.
Finally, amalgamate the chopped orange peels and goji berries into the mixture as well.
Now that your citrus plumcake batter is ready, all you have to do is line the mold with baking paper, pour in the mixture and level it out with a spatula.
Bake at 180° C in the preheated oven for 35 minutes. Before baking, however, do the toothpick test; you’ll avoid nasty baking-related surprises.
Once cooked, take the pound cake out of the oven and let it cool.
Meanwhile, prepare the icing with powdered sugar, a drop of water and a little lemon juice until the desired consistency is achieved.
Before serving, frost the cold cake and allow the frosting to set completely.
