he Panettone is the quintessential Christmas dessert. It comes in different flavors-from traditional to chocolate-covered (or filled) and represents, really, the beginning of the festivities that from December to January accompany us Italians. Today, we offer you a recipe that is different from the usual ?
You read that right! No classic recipe here. Sure, raisins and candied fruit are not missing, because we use traditional panettone. But we have an extra kick: a mascarpone filling that will amaze you with its color and mouthwatering goodness.
The cream that our food blogger has prepared will certainly surpriseyour diners. And it will do so, not only for its taste, but also for its colorful colors. Colors, obtained thanks to our Gusto&Colore food dyes, 100% natural.
Here is the recipe!
Ingredients for 1 Panettone
- 1 500 g panettone cake
- 750 g of mascarpone cheese
- 200 g of powdered sugar
- 250 ml of fresh cooking cream
- 4 g of Gusto Green (no longer available but can be created by mixing Gusto Blue and Gusto Yellow)
- 4 g of Gusto Yellow
- 4 g of Gusto Pink
- 4 g of Gusto Red
- 10 g of egg white
- 30 g of powdered sugar
- 10 g of cornstarch

Preparation of Stuffed Panettone
Cut the panettone into disks, forming 4 layers for the filling. Next, process the mascarpone and powdered sugar with electric whips.
Whip the cream and mix it with the resulting cream. At this point, divide the mixture into 4 bowls (about 300 grams per bowl).
Add Chef in Black® Taste&Color to each bowl. Amalgamate to even the color and transfer each colored cream to 4 disposable sac’a poche bags.
Begin filling the panettone, layer by layer, gently laying each panettone disk on top of the cream.
Finish with the dome and store the cake in the refrigerator.
Now, all you have to do is make the icing.
Beategg whites with powdered sugar,cornstarch and 4 grams of Gusto Red (beet concentrate). Transfer the frosting and let it rest at room temperature, covered with plastic wrap.
Before serving your holiday dessert, drizzle the frosting over the panettone dome and decorate as desired with sugar stars, coconut shavings, and silver beads.
