Mini Cupcakes What a Passion! If we add seasonal fruit and a colorful frosting to the recipe, the masterpiece is served .
This recipe takes us, at least in our minds, to England. The cupcake-literally cup cake-is a cupcake that, tradition dictates, is baked in a ceramic ramekin, previously buttered and floured.
Our food blogger, however, preferred to use the classic cupcake pan. The result is the same, but the preparation time is greatly reduced.
But the main feature of the mini summer cupcakes that you will – shortly – taste, is not the speed of execution. Rather, it is the ingredients that make them up.
On the one hand, to make a soft, good and healthy dough, along with sugar, butter and milk, there is our Sweet Soft Mix – made from selected and husked grains; on the other hand, to give a touch of color, 100% natural, our Gusto&Colore food coloring.
The end result is a dessert that will entertain the little ones and satisfy the sweet tooth of us adults.
Ingredients for 28 mini cupcakes
For the frosting:
- 300 g of mascarpone cheese
- 200 ml of cream
- 100 g of powdered sugar
- 2 g of Gusto Pink
- 2 g of Gusto Yellow
For decoration:
- fresh fruit
- mint leaves
For thedough:
- 240g of Sweet Soft flour
- 240 g sugar
- 100 g butter
- 200 ml of milk
- 2 eggs
- ½ of baking powder
- ½ vanilla bean
- 4 g of Gusto Pink
- 4 g of Gusto Yellow

Preparation
In a bowl, pour flour, sugar and baking powder, and start mixing. Immediately afterwards, melt the butter in a double boiler.
In another bowl, pour the milk and add the freshly melted butter, eggs, and half vanilla bean. Mix well and transfer the liquid to the bowl where you mixed the flour. Give it a stir and divide the resulting mixture into two equal parts.
At this point, it’s time to add a splash of color to your mini cupcakes. Add the Taste&Color powders, to form the two batters: one pink and one yellow.
Pour thebatter into a mini cupcake pan (or paper cups), making sure to fill it 2/3 full.
Now, all you have to do is turn on the oven to 170 degrees and let your mini cupcakes bake for about 10 minutes. Once ready, take them out of the oven and let them cool completely.
The cupcakes are almost ready. All that’s missing is the frosting and a final summer fruit decoration.
Frosting for cupcakes: how to get perfect frosting
Start by whipping the cream with the powdered sugar. Divide the cream into 2 bowls, and add, to each, 150 grams of mascarpone. Also add the Gusto&Colore powders, and create the two frostings: one pink and one yellow, like your beautiful cupcakes.
The resulting mixture is the frosting (or icing whatever). Take two piping bags, fill them with the frosting and form small tufts on top of the cupcakes, alternating the two colors.
Complete the decoration with some seasonal fruit, such as raspberries and strawberries, and a few fresh mint leaves.
