In today’s, we prepare tasty whipped shortbread cookies with black cherries and spices.
Ingredients
for about 30 cookies
- 250 g of Red Rice Flour Mix
- 175 g of soft organic butter
- 90 g of powdered sugar
- 1 large egg (50 g)
- 1 teaspoon grated lemon peel
- 1 pinch of cinnamon powder
- 1 pinch of Java long pepper powder
- ½ vanilla bean
- 1 pinch of clove powder
- 1 pinch of nutmeg powder
- 1 pinch of ginger powder
- 30 black cherries from Cantiano
Preparation
Step one: prepare the mixture
With a planetary mixer, using the dough hook, beat the butter together with the sifted powdered sugar, lemon zest, vanilla bean, and powdered spices until the mixture is puffy and fluffy and should have increased in volume. Incorporate the egg while continuing to whisk. Add the flour and mix it into the mixture with the help of a spatula until it has become smooth.
Second phase: composition
Transfer the dough to a piping bag fitted with a 15-mm star nozzle and create small clumps of dough on a baking sheet lined with parchment paper, spacing them appropriately. Place a black cherry well drained from the syrup in the center of each cookie.
Third stage: cooking
Let stand in the refrigerator for at least 30 minutes, then bake in the preheated oven at 180° for about 10-12 minutes or until lightly browned. Remove from the oven, let cool on a wire rack, and serve.
