Heart-shaped ravioli with pumpkin and ricotta cheese with thyme

Let’s see how to prepare heart-shaped ravioli, made with the help of Red Rice Flour Mix.

Preparation

1st Phase

  • Place Red Rice Mix flour on a pastry board. Make a hole in the center with your hands.
  • Crack the eggs into the hole, add thewater and oil.
  • Beat the eggs with a fork, gradually incorporating the flour inside.
  • Work vigorously with hands for about 10 minutes.
  • Wrap the dough in plastic wrap and let it rest 30 minutes at room temperature.

2nd Stage

  • Process the ricotta cheese with half of the grated Parmesan cheese. Season with salt, pepper, nutmeg and a few thyme leaves, and place the mixture on a pastry bag.
  • Roll out the dough on the floured pastry board to a very thin thickness.
  • Cut the dough with a heart-shaped mold.
  • Stuff the first small heart with the ricotta cream, lightly moisten another heart with very little water and lay on top of the other. Close by pressing lightly with fingers.
  • Proceed in the same way with the other hearts, counting about 10 to 12 hearts per person.
  • Arrange the filled hearts on a lightly floured paper tray.

3rd Stage

  • Finely chop the leek and wilt it in a pan with a little oil.
  • Add the diced pumpkin.
  • Adjust salt and pepper and cook for 2 minutes.
  • Boil the hearts in salted water for about 2 minutes according to thickness.

Saute the small hearts in the pan with the seasoning, adding the remaining Parmesan cheese and a tablespoon of cooking water. Serve hot.
