Red rice is an aromatic whole grain rice with elongated, red grains that obtain their natural pigment from the plant. The outer part of the grain is packed with red anthocyanins, natural pigments with an antioxidant action (similar to the one in red grapes) which give this rice its characteristic colour. It naturally contains fibre, vitamins, mineral salts and proteins. The rice grain is ground to obtain red rice flour which is red and very fragrant.
It should be added to wheat flour at 20% and is ideal for preparing bread, cakes and fresh pasta. It can be mixed with Gluten-free Flour to obtain mixes that are suitable for those who are gluten intolerant or suffer from coeliac’s disease. Suitable for mixing by hand or with a bread-making machine.
