Blinis are flatbreads made from flour and yeast, originating in Russian cuisine, traditionally served with sour cream or jam.
In this Veg version, Chef Salvini of Funny Veg Academy offers blinis made with Red Rice Flour and Hemp Flour.
For the garnish, we thought of a sprout salad and vegan mayonnaise. But indulge yourselves! The versatility of these scones will amaze you!
Ingredients for 10 blinis
- 50 g Red Rice Flour
- 30 g rice starch
- 10 g red bean meal
- 10 g Hemp Flour
- 100 g water
- 20 g evo oil
- 4 g dry baking powder
- 2 g salt
- Various spices
Preparation of blinis
Put the flours in a bowl, add the sifted baking powder, salt and finely ground spices.
Combine the water and oil in a glass, mixing them well together with a blender. Pour the liquid part over the dry ingredients and mix with a spatula until smooth and lump-free.
Heat a lightly oiled nonstick skillet. Using a spoon, pour the mixture into the bottom of the pan and let it cook until the blinis are crispy on the outside.
Bake them before serving for a little extra crunch.
Garnish to taste. The chef in this recipe suggests a combination with sprout salad, marinated sliced squash and vegan mayonnaise.
