  1. luca-antonucci-pizza-with-venere-black-mixPlace the Venus Rice Mix together with the sourdough powder in the bowl of the planetary mixer and oxygenate for 4 minutes.
  2. Add the water, then the salt and oil a little at a time.
  3. Knead with the dough hook to make the dough string well, it will take about 10 minutes.
  4. Let rise in bulk for about 24 hours, the next day break up by the necessary proportions and let rise at room temperatureuntil doubled in volume.
  5. After that time has elapsed, slide the dough onto a baking sheet previously greased with oil, spread it out with your hands, cover and let it rise at room temperature for about 2 hours.
  6. Stuff the pizza with rice flour and bake in a 300-degree oven about 10 minutes.
