OUR FLOURS ARE BORN ONLY FROM SELECTED GRAINS
The next stage of processing, blends the experimentation of years of research with ancient techniques of traditional milling, thanks to innovative processes designed to obtain a final product with its own characteristics. The most important grain cleaning steps include the sorting of each grain using the optical sorter and the husking of the grain using the dehuller.
THE OPTICAL SORTER
During the cleaning process, the grain is freed from the impurities it has been living with since harvest.These plants are state-of-the-art and feature differentiated speed systems.
INNOVATION IN THE GRAIN CLEANING PROCESS HAS UNDERGONE A BREAKTHROUGH IN RECENT YEARS WITH THE INTRODUCTION OF OPTICAL SORTING MACHINES.
These machines are capable of “photographing” all the grains in the grain stream, discarding broken, shriveled or blackened grains. Such defects not only affect the aesthetics of the flour, but can also imply an increase in contaminants in the finished product, because color variations in the grain are often indicative of attack by mold or fungi.
The machine distributes the grain in an even flow, illuminates it with special lamps and photographs it with high-resolution cameras.
IN THIS WAY, ANOMALIES ARE HIGHLIGHTED AND THE GRAIN IDENTIFIED AS “NONCONFORMING” IS AUTOMATICALLY DISCARDED BY A CONCENTRATED AIRFLOW.
THE HULLING OF WHEAT
The hulling process, prior to milling, through abrasion allows us to remove the outermost layers of each grain.
The dehuller is equipped with grinding wheels that, with their rough surfaces, “scrape” the grain as it passes through the machinery entering on one side and exiting on the other. Surrounding the grinding wheels is a perforated cylindrical casing: the shroud, which allows impurities to be moved away to an external collection filter, with the help of air flows that lift and push them toward it.
