Today’s recipe stands for gluttony and softness. But also color and originality. Here it is, all for you, the sweet danube.

Sweet danube is a cake composed of many balls of brioche bread. It can be filled either with jams and creams or with cheese, cold cuts and vegetables.

Yes, you got it right: the sweet danube recipe is versatile to the max. The difference, the ingredients make. Less sugar, a brush of egg yolk and the absence of jam, to give rise to a savory cake, ready-at least conceptually-to be served to your diners.

But today, the savory gives way to the sweeter danube variant. A recipe made even more unique by a multicolored sprinkle, made with as many as 4 different versions of our Gusto&Colore food coloring.

But let’s proceed with the recipe.

Ingredients for 2 round 24-cm baking pans

PS → For the filling, go ahead and choose your favorite jam. For the finish, however, 30 ml of milk will do just fine.

Preparation

The ingredients are not few, it is true. But don’t let that put you off: the process is really very simple.

Melt 200 ml of milk with 25 grams of butter, over low heat. Remove from heat, let cool, but be careful not to let the butter solidify again.

Meanwhile, in a bowl, mix 250 grams of flour with 5 grams of green food coloring and a pinch of salt. Dissolve 4 grams of yeast in the milk (which will already have cooled well), and pour the mixture over the flour. Mix until the dough is uniform in shape and color.

Transfer the dough to a clean bowl and cover with plastic wrap. Let rest for about 1 1/2 hours, at room temperature.

Now, you just have to repeat the same operation for the other 3 colors: yellow, pink and red.

Once you have prepared all 4 loaves, grease the two baking pans with butter. Next, divide the doughs into loaves of 25 grams each, starting with just the green one and continuing by rising order.

Shape them into balls, flatten and spread them out with your hands so that you create a small hollow. Hollow that you are going to fill with the filling you like best. After that, you can close the balls on the bottom again and lay them on the baking sheet, alternating colors.

Cover the pans with a damp tea towel and let rise, in an unlit oven, until doubled in volume.

After the necessary time has elapsed, brush the surface of the danubes with milk. Turn on the oven to 200° C and bake for about 30 minutes.

Et voilà! Sweet Danube, ready to be savored with the people you love most.
